Depends if the pushing of the grounds is considered borer (separating bad from good) and assur or being that there is some sort of mixture still happening mab not which in that case would be just the pouring the good out from the bad
Making coffee in a french press is also a bishul issue – mutar on Y”T, but assur on Shabbos
For Shabbes, I prepare coffee scene. For Y”T it should be fine
