Nope, you need to cover the fire AND the knob.
Which Rov said that just covering the knob is fine? never heard such a thing.
(You might be getting confused with a hotplate that doesn’t have a temperature control at all, then many say you don’t need to cover the fire, but that’s not the same thing.)

I was talking about KEEPING something on FOR Shabbos, (the function of a Blech) not putting something on ON SHABBOS (which is never allowed regardless if there is a blech or not. Unless it’s dry and it’s going on top of a pot or something)
And these things are in Shulchan Aruch, not really a matter of custom.

There might be diff opinions but I know some rabbonim def prefer the not adjustable hot plates. Chefman used to make this some one that wasn’t adjustable but doesn’t seem to make it.

Although fun fact: you don’t need a Blech to keep food that is at least half cooked (or fully raw) on the fire unless you want to be able to put it back on the fire on Shabbos.

I am sorry to say for those that want to bash this post…. There are poskim like dan said that does allow returning this onto the hot plate even on Saturday day. Of course ask your local rav however i have a yalkut Yosef open in front of me which allows returning solids to a hot plate on Shabbat since it is not an act of cooking someone will do on the weekday as long as knobs are covered even if the pot was put down on the ground. See yalkut Yosef siman 253 Hilchot Shabbat chelek 1. Not that everyone holds of this but a good majority does. He even says you can put liquids on the hot plate that’s set on a timer so that when you put it on the hot plate is not hot yet and then it will automatically turn on afterwards. Some hold it’s not allowed but SFardim do take this leniency. It may be night on your side of the world but on the other side it’s day so no point in really arguing it’s all a matter on where your holding. 🙂
