I bought this knife after an agonizing decision process. It’s a tough knife that comes with a good factory edge. Nice ergonomics. It reminds me of the industrial/commercial chef’s knives we had in the labs at General Mills.

It’s definitely in the German camp of brute force chef’s knives. This is not surgical Japanese steel. But it’s probably better suited to the rough and tumble everyday kitchen duty than a Japanese knife that needs to be treated carefully.
