He didn’t say he was going to spoon it over the fire. As long as he has it ‘byado’ (one hand) after he removes it from the fire he needs only one hand to hold the pot. If the other is holding the cover he’s got to find a place to put the cover down. This way he can flip up the cover without having to find a place for the cover and without letting go of the pot. A few days before Rosh Hashanah… Give him the benefit of the doubt.
