What about Capital One points? Can those be used, and at what conversation rates?

Further, you mention paying with two different cards. Aren’t those mutually exclusive? If you pay with Sapphire you won’t get the luggage perks, and with an airline card you don’t get the trip insurance, etc?

Finally, you mostly reference Chase points, not CapitalOne. Is there a reason? Are C1 points no good?
