Keep in mind to pack TP for the flight, as they usually run out mid flight.
Also buy a bottle of water in the airport so you stay hydrated, as they finish their drinks too.
But you’ll get there on the cheap.
And for G-d’s sake, landing in TLV is statistically MUCH more dangerous than flying over Ukraine. Come on people.

UIA is a decent airline. Much better service than many of the US airlines. Though their economy seats are quite uncomfortable.
Kiev airport is safe.

I flew with them back in May and the exceeded my expectations. The 767 they use is around 20 years old but it looks like it has lately been renovated, also the flight attendants onboard did a great job. The only downside was flying the extra miles as Kiev is a little out of the way when you go between JFK and TLV
